Le Fort Cuisine

le fort bucerias restaurant

This reservation only restaurant has been rated 3 out of 3 stars by Frommer's Guide. It has also been recognized in magazines such as: NY Times, LA Times, Vallarta's Homes & Living, El Financiero, Mural, to only name a few.

Chef Le Fort is the winner of numerous culinary awards, and his warm conviviality is the real secret ingredient of this culinary experience.

Once dinner is served, the chef and his wife, Margarita, will join the table, entertaining with stories of their experiences in Mexico, France and beyond.

Remember - The first group of six to book for the evening chooses the menu, hors d´oeuvre, main course and dessert; the maximum class size is 18, so groups often blend together.

An evening at Le Fort Restaurant is an unforgettable dining experience filled with great wine and excellent food. And it's more than dinner...

The evening

You are first greeted by Chef Gilles and his wife Margarita who proceed to give you a small tour of the restaurant. You are then seated at the U-shaped bar in the intimate kitchen to begin the meal with pâté and Champagne. Chef Gilles then starts the meal with the freshest of ingredients, explaining the process in his humourous style and sharing his cooking secrets while you sip on white and red wine from his cellar. As the evening progresses, you taste the meal, learn the secrets and enjoy the company.

After desert, Chef Gilles rolls out the Armagnac cart and explains why it's different from Cognac. You are given the opportunity to taste a variety of vintages, costs and types of Digestifs. The evening closes with a tour of the cellar where you can purchase wine (Chateau Latour 1959 anyone?) and their mini gift shop where you can purchase the 'magic salt' to season any dish!

* Please remember that this is by reservation only so please fill out the reservation form below!

  • Choose from Printed menu
  • Three course meal
  • Two more different wines during dinner

Homemade sausages, pâtés, and more delicacies are available in the adjoining shop.

The Wine Cellar

Le Fort has an extensive wine cellar - I saw some Armagnac and Cognac bottles from 1973, 1968, right down to 1953! How many times in our life time do we get to sample such aged pleasures? Within this wine cellar are some 3,000 bottles! You will find some of the best brands and harvests of Mexican and French wines A large variety of red and white wines, champagnes, etc. The wine cellar is temperature controlled all year round to preserve the best quality of the wine.

Looking over their guestbooks, it's evident that the evening is always memorable. Please take the time to visit this page after your meal and add your comments of the evening in our comment section on this page.

I organized a long and lazy lunch at LeFort Cooking School. I took along 11 amigos, we watched Gilles demonstrate how to prepare mango dressing, duckling a l'orange and creme brulee, then sat back, drank French wine and dined on the fruits of his labor. A wonderful and unique way to spend a Sunday afternoon! I highly recommend it.

We have had the pleasure of this dining experience several times over the last few years, and this year, when our whole family was visiting we celebrated our granddaughter\'s birthday. It was outstanding! Our family loved it! The food has always been wonderful, the hospitality of Chef Gilles and Margarita is great. You always meet interesting people. One of the highlights of our annual trip to Bucerias.

When it comes to creating an unforgetable experience out of something as ordinary as having dinner, Gilles and Margarita are experts. They’ll turn your common ‘going out for dinner’ into something worthy of repeating. Not only is the food delicious, but the ambiance created by the fact that you are witnessing the preparation of your food, whilst enjoying delicious paté and glass of wine, and then dining along with the host and hostess and maybe other people that came in that night, is out of this world. The quality of the food and friendliness of Gilles and Margarita are never changing, but the experience is always magnificently different! Once you’ve tried the magic salt, you’ll never go back ;)

We never miss an opportunity to dine with Margarita and Gilles when we are in PV. The ultimate host and hostess. They are masters at making you feel at home in their home. Gilles' meals are delicious, the ingredients are fresh and the presentation is beautiful. Watching Gilles prepare the meal is entertaining and he shares his recipes!!! Never a shortage of wine, great food, lovely dinner companions, engaging conversation or Magic Salt! We have shared the Le Fort experience with our visiting friends and family. They all raved about meal AND the hospitality. A unique and very special evening. Patti and Michael D'Agata from Charlotte, NC February 27, 2011
